Why is a radiator pressure cap needed in a water cooled system?

Why is a radiator pressure cap needed in a water cooled system?
To allow the coolant to reach higher temperatures, with out boiling. When a liquid is pressurized, it can exceed it's boiling point and remain liquid, but when the pressure is released (like removing the pressure cap) the liquid is instantly tuned into super heated steam.
